The Webmaster's Favourite Recipes

I'm put my favourite recipes in cyberspace so I can find them when I need them, wherever I am. They have also been adapted for Caribbean Cooking which takes into account added heat & humidity. Mostly adjustments in yeast & water.


Crepes
Boule
Bread or Pizza Dough

2 tbs butter
1-1/2 cups milk
2/3 cup flour
1/2 tsp salt
3 eggs

3 cups flour
1-1/4 cups water (@110 degrees)
1 tbs yeast

1 tsp salt
1 tsp sugar

4 cups flour
1 tbs yeast

1 tsp salt
1 dollop oil
1 dollop honey or molasses
1 cup water (@ 110 degrees)

  • Mix all ingredients with wire whisk till smooth.
  • Melt butter in crepe pan over medium-high heat.

    NOTE: Can refrigerate batter. Can also freeze cooked crepes, just wrap in wax paper.
  • Form in Boule shape.
  • Let rise.
  • Bake @ 350 degrees for 20-30 minutes.
  • Combine all dry ingredients in food processor.
  • Add dollop of oil/honey/molasses.
  • S-l-o-w-l-y add water.
  • Remove & knead.
  • Place in bread pan to rise.
  • Bake @ 350 degrees for 20-30 minutes.

Daddy's Pancakes
Chocolate Chip Cookies
 

1-1/4 cups flour
2 tbs sugar
2 tsp baking powder
3/4 tsp salt
1 egg
1-1/3 cups milk
3 tbs oil

3/4 cup butter (12 tbs)
1 cup brown sugar
2 tbs milk
1 tbs vanilla extract
1 egg
1-3/4 cups flour
1/2 tsp salt
3/4 tsp baking powder
1 cup chocolate chips

 
  • Combine dry ingredients.
  • Combine & add wet ingredients.
  • Drop onto hot skillet, add sliced banana or sprinkle with flax seeds.
  • Combine dry ingredients.
  • Combine & add wet ingredients.
  • Add chocolate chips.
  • Bake @ 350 degrees 12-15 minutes.
